A 130-year-old experience of "koji and miso" – nurtured by time through handcrafted preparation.
Shinmura Koji Miso Shoten has been making koji and miso in Toyama for 130 years.
This long-established company uses carefully selected ingredients such as the pure spring water of the Tateyama mountain range, Koshihikari rice from Toyama Prefecture, and Ootsuru soybeans from Toyama Prefecture, and brews its products carefully using additive-free, natural brewing methods.
The highlight of the workshop is the "miso-making experience."
The boiled soybeans are mashed, mixed with koji and salt, and then packed tightly into a container, removing as much air as possible, to prepare the mixture.
The time spent working with your hands, surrounded by the aroma of koji, is a moment when you can feel fermentation up close.
The process of making miso includes the enjoyment of waiting for it to mature, and once it's finished, you can savor the "taste you made yourself" at home.
Depending on the season, they also offer salt koji making classes and, in winter only, a "kabura sushi making experience."
Take home some of Toyama's delicious fermented foods along with some wonderful memories.
