Itosho Honten
A famous restaurant serving Toyama's soul food, motsuni udon (udon noodles with stewed offal).
Founded in 1972, this specialty udon noodle shop has been loved in Toyama for over half a century. Their signature dish is "Motsu Nikomi Udon" (udon noodles with stewed offal), made with meticulous care from ingredient selection to preparation.
The noodles used are handmade Himi udon, known for their firm, springy texture. The pork offal is carefully prepared for each part and simmered slowly in a special sauce until it melts in your mouth. The secret broth, made with layers of umami from four types of seafood and kelp, is so flavorful you'll want to drink it all up.
When you open the lid of the bubbling earthenware pot, the savory aroma of miso and garlic wafts up along with the steam, whetting your appetite. Be sure to try this soul food of Toyama.
