The owner-chef, who has pursued a culinary career since the age of 18 and honed his skills at renowned restaurants in the prefecture and abroad, creates a course menu where you can savor a story through sushi, other dishes, soup, and dessert, all served in the order of the "food chain."
Even when it comes to the sushi itself, GEJO uses rare ingredients that they can only source, prepares the rice using either Koshihikari or Isehikari depending on the topping, and pays attention to every detail, from the soy sauce to the condiments, with the pairing of each piece of sushi in mind.

This popular restaurant, which has been gaining fans through word-of-mouth since opening in 2020, operates on a reservation-only basis.
