Taiki Nishicho Honten
Experience the history of Toyama Black ramen in the birthplace of the original Taiki ramen shop.
This is the birthplace of "Taiki," known as the originator of Toyama Black ramen.
Although the restaurant temporarily closed due to various circumstances, it was encouraged by many voices hoping for its reopening, and new members have taken over the business, restarting as "Nishimachi Daiki."
The key to this ramen lies in the salty bamboo shoots. The intense flavor, strong enough to be eaten as a side dish with rice, is a remnant of the time when it was intended to replenish the salt levels of manual laborers. Mixing the noodles and toppings vigorously with the rich soy sauce-based soup mellows the saltiness, creating a harmonious blend of flavors. Combined with the coarsely chopped green onions and freshly ground black pepper, this is a powerful bowl of ramen that you won't forget after just one bite.
Please enjoy the history of Toyama Black ramen, along with a bowl of rice.
